Comprehensive Information about Cacao

The Latin name for the cacao tree is Theobroma cacao. "Theo" means "God," and "Broma" means "food" or "nourishment." Cacao has been revered as the food of the Gods since ancient times, particularly by the Mayans. While we all recognize cacao as the raw material for chocolate, there is a significant distinction between the chocolate found in supermarkets and ceremonial cacao.

The ceremonial cacao we work with is sourced from an organic farmer's cooperative that employs sustainable, natural, and organic practices. The beans are of high quality, which is essential because nothing is added to ceremonial cacao. The cacao remains intact.

The beans are roasted at low temperatures, preserving the nutrients and health benefits of cacao. The ceremonial cacao used is 100% traceable, so we know exactly where it comes from.

In contrast, the chocolate used in the mass chocolate industry is made from bulk cacao, which means the cacao comes from various plantations. The cacao is blended in a container to achieve a consistent flavor. This is necessary because each cacao has a different taste.

The cacao beans are of lower quality. The fats are separated from the solids. *The cacao mass is separated from the cacao butter and eventually recombined. The mass (35% for dark chocolate and 25% for milk chocolate) is supplemented with sugar, milk powder, soy lecithin, flavors, and cacao butter. Due to these additives, the quality of the bean is not the highest priority for major chocolate brands, which is why their focus is on achieving a consistent flavor.

Almost all supermarket chocolate is made with cacao that has been processed at high temperatures.
The effect of heating cacao at high temperatures is that it changes the molecular structure, reducing the overall nutritional value and losing the health benefits of cacao.

*By grinding the roasted cacao, the fat inside the bean is released, leaving a liquid substance. This is called cacao mass. This cacao mass can be used as part of chocolate production. Cacao mass is also used to produce other products such as cacao butter and cocoa powder.

Cacao is rich in beneficial ingredients, such as magnesium, antioxidants, and various love chemicals, which relax muscles and tissues, increase blood flow, lower blood pressure, and enhance oxygen levels in the body.

Contra Indications 

Because cacao is so gentle, it can be used by almost anyone. In Mayan ceremonies, even children participated. However, there are contraindications, and if you have any of these conditions, your cacao should be adjusted. Please notify me when signing up.

• Pregnancy and breastfeeding.
The stimulating effect of theobromine in cacao is similar to that of caffeine. It is recommended to consume no more than half the usual amount of cacao.

• Antidepressants.
If you are taking antidepressants based on MAO inhibitors, it is advised to consume a small amount of cacao. This is because the tyramine in cacao is contraindicated with MAO inhibitors. Research has not yet shown what will happen when people take SSRI-based antidepressants and cacao together. Therefore, we recommend starting with low doses.

• High blood pressure (when using blood pressure-lowering medication) – consume only half a cup – otherwise, it may cause low blood pressure.

• Heart problems.
The theobromine in cacao increases heart rate and lowers blood pressure.
